Acquerello, the rice that the Rodolino family grows in the historic Tenuta Colombara, is unique for 3 reasons:

  1. It is Italy's first seasoned rice. After harvesting, it is stored in cooling silos for a long period of time - from 1 to 7 years. In this way, the starch ripening process can be completed, the rice remains firmer to the bite and absorbs spices better. That's why Acquerello is the excellent base for every recipe.
  2. It is the only rice in the world that is processed using the grinding screw. It is polished using a "revolutionary" method that was invented in 1884 and is still considered the best, albeit slowest, to this day. It works in a very gentle way and guarantees perfectly undamaged grains. This machine is only in use in Tenuta Colombara.
  3. The only white rice with nutritional value of whole grain rice. This never-before-realized dream found its fulfillment through Piero Rondolino with a simple, natural method protected by their international patent. Every grain gets back what makes the seed so valuable: vitamins and minerals.
