Product description

Black garlic is created by gently heating white garlic for two to three weeks, causing it to ferment. The black color is due to the so-called Maillard reaction - a browning process that also gives the garlic its unique umami taste. The heat changes the composition of proteins, amino acids and sugars, creating complex aromatic compounds reminiscent of fried onions, balsamic vinegar, caramel and licorice. The otherwise typical garlic taste, caused by the allicin it contains, fades into the background and can only be perceived subtly. We recommend black garlic with rice, risotto and potato dishes as well as fish, meat, poultry and filled pasta. Black garlic is also popular in dips and spreads.

Origin

The spice factory has existed in Bad Endorf since 1957 and has preserved the centuries-old tradition of the spice miller's craft ever since. Their focus is on the almost extinct profession of spice traders, who were viewed as healers, merchants, pharmacists and apostles of pleasure due to their wealth of knowledge about flavor combinations and healing effects. With its vision, the Rosenheim spice mill is reviving that history.
