This product meets IGP regulations. The capers are of course from Pantelleria, like all the others, but they are preserved in sea salt. This best preserves their clear, elegant taste. First you have to remove the salt and then soak the capers for a few hours. Then you have a small pearl in front of you, which, finely dosed and used in a targeted manner, is a delicacy. Water well before use.
