Product description

Each large monkfish yields two spectacular pieces of white cheek meat. This is removed immediately after capture and shock-frozen at -95°C. Except for the last membrane, which is deliberately left on the meat to protect it, the monkfish cheeks are almost ready to cook. The meat of this Breton/Icelandic delicacy is firm and has a wonderfully nutty taste. The monkfish cheeks can be stored, are very easy to prepare and are a real pleasure with a clear conscience!

  • The optimal defrosting - for those who plan ahead: You can gently defrost this product in the refrigerator within 12 hours.
  • The quick version - for those who decide at short notice: If you are in a hurry, it is possible to defrost this product in a water bath within 1 hour. The water should be cold to lukewarm.

Origin

Our monkfish, with the Latin term Lophius piscatorius, was caught with trawls in the northeast Atlantic (FAO 27 VII and VIII).
