Sustainably impressive - The origin of the black hake:

It's not just its taste that impresses. The predatory toothfish swims in the cold, clear waters of the deep volcanic underwater fissures of the sub-Antarctic at a depth of 2,000 meters. What is remarkable is the sustainable fishing method used to catch black hake. Longlines are used instead of trawls to avoid bycatch. The fish caught are immediately processed on deck and flash frozen to preserve their top quality and freshness.

What is the best way to prepare toothfish?

The Patagonian Toothfish is extremely versatile in its preparation. With its delicate flavor nuances and rich options it is a real treat for foodies.

  • Gentle Cooking: The Patagonian Toothfish can be cooked gently to preserve its delicate flavor.
  • Oven-fresh version: Try the oven method by serving it with a refreshing sauce made from lemon, dill and capers.
  • Short frying: First fry in butter for 4 minutes on the skin side, turn and fry for another 2 minutes. Try fried toothfish with sea asparagus on mashed potatoes.

Origin

Deep in the sub-Antarctic, 4,109 km from mainland Australia, lies Heard Island, one of the most surreal islands in the world. At the southern tip of this remote island, the stunning Glacier 51 spills into the surrounding icy waters, creating the ideal environment for the MSC-certified predator that roams the underwater volcanic fissures 2,000 meters below sea level.
The black hake, Latin term Dissostichus eleginoides , was caught with hooks and longlines in the Antarctic Indian Ocean (FAO 58).
