This MSC-certified Toothfish has Wagyu-like characteristics with complex aromas and a wonderfully delicate mouthfeel. The name “black hake” refers to its dark, almost black back color. However, its flesh is snow white. This fish has a buttery and sweet taste. The texture of this special fish is very dense, so it can be prepared in any way and doesn't fall apart.

Origin

Deep in the sub-Antarctic, 4,109 km from mainland Australia, lies Heard Island, one of the most surreal islands in the world. At the southern tip of this remote island, the stunning Glacier 51 spills into the surrounding icy waters, creating the ideal environment for the MSC-certified predator that roams the underwater volcanic fissures 2,000 meters below sea level.
The black hake, Latin term Dissostichus eleginoides , was caught with hooks and longlines in the Antarctic Indian Ocean (FAO 58).
