Whitefish belong to the salmon family and are highly valued food fish due to their firm, white, aromatic flesh. The whitefish fillets are natural, so they are not completely bone-free. The whitefish is also known as whitefish or, especially in northern Germany, as vendace. Aromatic in taste and a pleasure both fried and grilled. The fillets can consist of 2-3 pieces.

For 60 years, the Müritz fishermen have worked strictly according to the principle of "stocking before the catch" in order to guarantee the sustainable management of their waters. Fish stocks can be increased and stabilized through stocking and species-appropriate rearing.

After being caught, the vendace are filleted in the company's own fish factory. The fillet of vendace (also known as whitefish, whitefish or Baltic sea snail) is perfect for frying on the skin or for cooking whole.
