The lobster is ideal for frying and grilling, but roast it only briefly on the meat side to keep the meat nice and juicy. The shell protects the meat and cooks it perfectly. European lobster is caught sustainably in the Northeast Atlantic (FAO 27) using lobster pots. Its Latin technical term is Homarus gammarus .
