Frequently asked questions

What does lobster meat taste like?

The firm, juicy meat of Canadian lobster has a delicate flavor with subtle sweet and nutty notes.

What is the best way to prepare lobster meat?

Thanks to its tenderness and juiciness, premium lobster meat is extremely versatile. It works beautifully in fillings, pasta dishes, salads, or as an addition to soups. Lightly sautéed in butter—perfect for lobster rolls—it becomes a true culinary highlight. Our insider tip: Heat water in a kettle and allow it to cool to around 70 °C (158 °F). Add the thawed lobster meat and let it steep for about 10 minutes. Afterwards, it’s ready to use in your dish. Alternatively, you can gently warm the lobster meat in a hot pan with a little butter for about 5 minutes, or heat water in a pot, season it as desired, and let the meat gently poach for 3–5 minutes.

Why is lobster so expensive?

Lobster is considered a true premium seafood and one of the most prized crustaceans in the world. There are several reasons for this. First, the flavor and tenderness of the meat are exceptional and truly unique. In addition, lobster is a relatively rare product. For example, the Canadian lobster used in our products is sourced from strictly regulated, sustainable fisheries. The catch is carefully controlled, and lobsters are harvested only in limited quantities and at the optimal age. This ensures that lobster populations remain healthy and sustainably managed.

Is a “Hummer” the same as a lobster?

In short: yes. "Hummer" is simply the German word for lobster. The term lobster usually refers to the Canadian lobster, which is particularly well known for its large, meaty claws.
