Matjesfilets are lightly salted fillets of herring that are enzymatically ripened using traditional methods. Emder herring fillets are characterized by their special quality: only the best North Sea herring from the Norwegian coast are used, which are freshly caught and frozen to ensure a unique freshness. The fillets are then gently processed by hand and marinated in oil. This guarantees optimal quality. Cold potato salad, fresh leaf salad or even on a roll, the herring fillet is a classic all-rounder.
