This king salmon side comes from the pristine Marlborough Sounds of New Zealand - a region renowned for its sustainable aquaculture and crystal clear waters. The New Zealand Chinook salmon, also known as king salmon, impresses with its particularly high fat content, its butter-tender meat and its unmistakably mild, nutty taste.


In contrast to the already familiar Ora King salmon side, this side is a so-called Trim C - which means: with skin and the characteristic center bones (pin bones) that many professional chefs also appreciate. This variant remains particularly succulent and is ideal for creative fish cooking.

Preparation tip: As this is a Trim C cut, the pin bone line is still included - this gives the fillet structure, but it should be removed before serving. This is very simple: carefully feel along the pin bone line, grab the bones one by one and pull them out in the direction of growth. Alternatively, you can portion the fillet along the line and remove the bones with a targeted cut - just like the professionals.
