The snow crab comes from the icy waters of the North Atlantic and the Arctic Ocean and lives at depths of up to 500 meters. Its meat is characterized by a snow-white color with a bright orange surface and is reminiscent of the clear sea water. This delicacy from the depths of the sea combines a delicate texture and an unmistakable aroma that delights gourmets around the world.


The snow crab is an incomparable delicacy. Its low-fat meat is rich in nutrients such as iodine, zinc, vitamin A and B12. The slight sweetness of the meat goes well with ingredients with a sour or fatty taste. Snow crabs are steamed because steaming is gentler on the crab meat than boiling and thus its consistency and taste are better preserved.

Preparing snow crab


Snow crabs are caught by setting traps and pots that they consider to be a cave. This method of fishing is considered to be the most gentle way to catch the crabs. In order to protect the species, agreements and arrangements are made that stipulate a minimum size for the animals caught. The shellfish are then shock frozen on the cutter, which preserves the quality of the meat.


Before cooking, the snow crab should be thawed slowly and carefully in the refrigerator. You can then enjoy the crab meat cold as a tartare, cold as a topping or warm in dishes. The claws of the snow crab are wonderful for frying in butter and adding dips. When cooking, it is advisable to carefully remove the meat from the claws and legs, as removing them can be a bit laborious.

Origin

The snow crab, with the Latin term Chionoecetes opilio , is caught in the Barents Sea (FAO 27) using traps and pots. It is caught using special crab pots that serve as fishing gear. The snow crab fishery is subject to strict regulations, including controlled catch quotas, to maintain population balance and minimize environmental impact.
