Yarra Valley Premium Caviar

The Atlantic salmon pearls are marinated for 48 hours in a homemade marinade made from first-class soy sauce, katsuobushi - these are flakes of dried bonito fish, saké, and hand-harvested wakame from the waters of Victoria. The perfectly round, plump pearls then present themselves in a deep, tempting orange and have an inimitably delicate yet firm texture. If you concentrate, you can literally hear the pop in the roof of your mouth. When the membrane of the delicate pearls breaks on the tongue, an umami-rich spectacle unfolds, revealing the subtle nuances of salmon caviar and warm soy notes.
