Ingredients

  • Seafood mix 250 g
  • 250g spaghetti
  • A handful of cherry tomatoes
  • A dash of dry white wine
  • A handful of fresh parsley
  • 2 cloves of garlic
  • 1 dried chili chopped
  • A dollop of tomato passata
  • Extra virgin olive oil
  • Salt and freshly ground pepper

Preparation

  1. Cook the spaghetti in a large pot with plenty of boiling salted water according to the instructions on the packet until al dente. For 100 g of spaghetti, use at least one litre of water and around 10 g of salt. About one minute before the end of the cooking time, skim off a cup of pasta water and set aside.
  2. While the pasta is cooking, you can leave the cherry tomatoes whole or, if they are particularly large, halve or even quarter them. Cut the garlic cloves into thin slices and chop the parsley.
  3. Heat some olive oil in a large pan. Add the garlic and sauté briefly. Add the seafood mix to the pan and fry for about 2 minutes, stirring occasionally.
  4. Add the cherry tomatoes to the pan and fry briefly until they are soft. Add a dollop of tomato passata to the pan and mix well. Add a dried chilli pepper if you like.
  5. Deglaze with a dash of dry white wine and allow to simmer briefly so that the flavors blend.
  6. Add the drained spaghetti straight from the pot to the pan with the seafood. Add the reserved pasta water to create a creamy sauce using the starch it contains.
  7. Add the chopped parsley. Mix well and simmer for another 1-2 minutes to allow the flavors to combine and the sauce to thicken slightly.
  8. Carefully season with a pinch of salt, as the pasta water is already salty enough. Season with freshly ground pepper and serve.

Tip: If children are eating with you, you can replace the white wine with a splash of lemon and simply leave out the chili. The pasta will still taste delicious, and the little ones can also enjoy the Mediterranean taste experience to the fullest.
