Product description

Black Cod Page - Enjoyment and quality from certified wild catch

Black cod, also known as sablefish or coalfish, is an internationally acclaimed food fish, enjoyed by everyone from home cooks to Michelin-starred restaurants. It boasts an exceptional balance between a buttery, intense flavor and a velvety yet firm texture. These fish inhabit the cold waters of the North Pacific and are caught by local fishing families. These families have been working in the fishery for generations, combining MSC-certified fishing methods with supporting the local economy through their own fishing cooperative. They guarantee maximum traceability – the name of the individual fishing boat is printed on every package.

Ein Fischerboot auf dem Fang nach Black Cod
In Miso eingelegter und im Ofen gegarter Black Cod mit Pak Choi

Black Cod - A multifaceted delight:

Thanks to its high omega-3 content, black cod is excellent for cooking with citrusy, spicy, and savory flavors. Serving it as a side is ideal for a culinary experience with several people, for example, as part of a special Christmas menu. Black cod became particularly well-known through the restaurant chain NOBU and their miso black cod with pak choi dish: here, the fish is marinated in a miso marinade for hours and then briefly pan-fried. For an especially fresh twist, try serving it with a kefir and herbs sauce. With its distinctive aroma and delicate, buttery flavor, it's a true gourmet fish that will delight any seafood lover.

Perfectly suited for:

Miso marinade

Oven or grill

The combination with intense aromas

Origin

The black cod, scientifically known as Anoplopoma fimbria, is caught in the cold waters of the North Pacific (FAO 67) off the coast of southeastern Alaska. Under strictly controlled conditions, the fish are caught by small fishing boats using hooks and longlines. Since 1944, the fishermen have been organized in a cooperative that shares all profits among the fishing families – fair for the producers and fair for the local businesses involved.
