Traditional maturing and processing

The anchovy is a migratory fish that travels thousands of kilometers over the course of its life in search of food. At Conservas Ortiz, the highest quality anchovies are fished from the Cantabrian Sea. They then undergo a traditional maturing process of at least six months in barrels and are filleted individually with a razor blade before being filled into jars and cans and poured with the finest olive oil.
