Vintage sardines are sought-after delicacies. Pollastrini has saved cans from the 2019 vintage. The sardines are particularly fatty and are only fished in September and November. They are simply marinated in olive oil. Don't forget to turn the cans every now and then so that the oil soaks the fish meat evenly. Consistency and taste change.
