1 liter lobster stock -
150 g Canadian lobster (prepared) - 50 g butter cubes (frozen)
- 250 ml sweet cream
- Focaccia sliced thinly and lightly toasted
- salt and pepper
French Cuisine - Bisque is a flavorful pureed soup. It is made from lobsters or other crustaceans.
Preparation
- Thaw the flash-frozen lobster in the refrigerator overnight.
- Defrost the lobster stock in the pot over low heat. Add the sweet cream to the stock and slowly reduce by approx. 10-15 % to the desired point.
- Gently simmer the released lobster and claws in the hot stock (approx. 3-5 minutes). Be careful, do not let the lobster bisque cook!
- Carefully remove the lobster from the bisque and cut into pieces.
- Season the bisque with salt and pepper and add the cooled butter cubes.
- Mix with the hand blender until foam forms on the surface.
- Place the bisque in a deep plate and add the lobster meat.
We recommend focaccia to go with it. Slice the yeast dough bread thinly and toast it. This is how delicious chips are made. Finally, you can place the toasted focaccia chip lengthwise across the deep plate and enjoy with all your heart.
