DEFROSTING INSTRUCTIONS FOR TUNA – STEP BY STEP

STEP 1 Place the tuna in the package in cold water for 15-20 minutes until the edges are thawed. Alternatively, remove the tuna immediately from the package and thaw in salt water at approx. 25°C for three minutes.
STEP 2 Remove the tuna from the package and thoroughly remove the saw residue - to do this, rub and dab the tuna with a suitable clean paper towel.
STEP 3 Wrap the tuna neatly in a fresh paper towel. All sides and corners must be covered. When thawing multiple pieces, they must not touch each other. Then let it thaw in the fridge at 3-5°C for at least 3-4 hours.
STEP 4 Remove the tuna from paper towels and let it warm to room temperature so that the beautiful red color can fully develop again. Prepare as desired.

GENERAL INFORMATION ABOUT TUNA

Tunas form their own genus within the fast predatory fish. The tuna owe their name to their enormous speed of up to 75 kilometers per hour - “thýnnos” translates as “I rush”. This is one of the reasons why tunas are able to travel up to 160 kilometers a day. Tunas are among the most important food fish of all - and that brings us to the problem: Some tuna species are threatened by overfishing. This makes it all the more important to only consume tuna that is sustainably caught. LOOK Depending on the species, tuna reach a body length of between one and 4.5 meters and a weight of between 20 and 700 kilograms. Its body is spindle-shaped and only slightly flattened at the sides. Tunas have a dorsal fin and a strong caudal fin, which is characterized by its crescent shape. Their body is covered with small scales that become larger towards the front of the body. HAPPEN Tunas are found in all polar oceans, especially in tropical and subtropical seas. They live in water depths of up to 1000 meters - both in the open sea and near the coast. FREQUENTLY ASKED QUESTIONS ABOUT BUYING TUNA ONLINE

What does raw tuna taste like?

On the palate, raw tuna has a texture reminiscent of marzipan, while its flavor can be likened to a tender veal fillet, enhanced by a mild and pleasantly salty aroma. When paired with a delicate soy sauce, it becomes a truly remarkable culinary experience.

Buy tuna online: Is the tuna at HONEST CATCH suitable for raw consumption?

"Our tuna products are either delicately smoked or, such as our tuna steak and tuna saku block, are of sashimi quality, making them perfectly suitable for raw consumption. Additional information can be found on the respective product pages. Please note the defrosting instructions for our tuna products, as they are important for preparation."

What is the best way to prepare tuna?

The suitability for different cooking methods depends on the type of tuna. Red-fleshed tuna, exemplified by our Tuna Saku Block and Tuna Premium Steak, is well-suited for raw consumption due to its sashimi quality. However, caution is advised when frying or grilling this type of tuna: Because red tuna meat is naturally low in fat, exceeding the ideal frying or grilling time can result in dryness.

On the other hand, white tuna meat is less fatty compared to red tuna. This makes white tuna meat, such as our Tuna Premium Steak, much better for frying or grilling. The ideal method for cooking the premium steak is to treat it like a traditional steak, followed by seasoning with coarse sea salt, pepper, and a touch of lemon juice.

How healthy is tuna?

The healthiness of tuna largely depends on its processing method. In general, tuna is highly nutritious. It is a rich source of protein and contains essential Omega-3 fatty acids like Docosahexaenoic acid (DHA) and Eicosapentaenoic acid (EPA), while being virtually carb-free. Additionally, tuna provides essential minerals such as magnesium, zinc, iodine, and iron. Moreover, tuna contains Vitamin D, which is a rarity in the realm of foods. However, it's important to note that these values can vary significantly, especially concerning the high-quality fatty acids when it comes to conventional canned tuna.

How does tuna taste?

High-quality tuna is characterized by a slightly nutty taste. The consistency of its meat is significantly firmer than other fish and more comparable to actual meat. Depending on the species, tuna has different flavor nuances. In terms of color and taste, white tuna has certain parallels to chicken meat, while yellowfin tuna is more reminiscent of veal - supplemented by a slightly salty aroma.

Can I also buy sustainable tuna from HONEST CATCH?

At HONEST CATCH, we attach great importance to the fact that our tuna comes from sustainable catches. That's why we put the sources from which we get our tuna products through their paces. In our online shop you will only find tuna that was caught with a pole and line. On the one hand, we make a valuable contribution to curbing overfishing and, on the other hand, we ensure that no unnecessary bycatch occurs. On top of that, our suppliers receive a fair price for their work and you can enjoy our premium tuna products with a clear conscience.

How do you recognize high-quality tuna?

One way to recognize fresh tuna is its red color, which is somewhat reminiscent of beef. However, the tuna only has this red color when it is raw and thawed. Under no circumstances should the tuna shimmer silver-green, feel greasy or smell very strongly of fish. Tuna meat should also have a very firm consistency.

What types of tuna can I buy from HONEST CATCH?

In our product range, you will find a variety of tuna products, including Albacore Tuna; Tuna Saku Block - AAA-Grade; Tuna Steak - Premium-Grade; Smoked Tuna Fillet "Black Forest Style"; and Sesame-Coated Smoked Tuna Fillet. The HONEST CATCH Albacore Tuna is a white tuna. Both in terms of coloration and taste, the flesh of white tuna resembles chicken meat to some extent, but it is noticeably more tender. As for the other products in our selection, they are all yellowfin tunas, and their flesh has a taste reminiscent of exceptionally tender veal. When consumed raw – and there's no impediment given the outstanding sashimi quality of our tuna products – the yellowfin tuna exhibits a subtle marzipan note.

What should I pay attention to when buying tuna online?

For you personally, the most crucial factor when it comes to tuna is, of course, its taste, and that is primarily determined by the product's quality. Ensure that you buy high-quality tuna, which you can identify by its coloration. Premium tuna should have a dark red hue after thawing, and in comparison to other fish, it should be relatively odorless. We recommend exclusively purchasing tuna online that has been shock-frozen immediately after being caught. This guarantees the freshness of the product, while maintaining its quality. It is also important that you exclusively buy sustainable tuna online. Make sure that the tuna was caught using pole-and-line fishing methods, as this avoids unnecessary bycatch.
