Loch Duart salmon (Salmo salar) comes from a responsible aquaculture operation in the clear, cool waters of the Scottish Highlands and islands. Raised in remote sea lochs with strong currents, the fish develop a particularly firm texture and a delicate, natural flavor. The fish are raised according to strict standards and are based on a unique heritage strain that prioritizes quality over quantity. No antibiotics are used at any stage of the farming process. The result is a salmon whose flavor is closer to that of wild salmon than to conventional farmed salmon - clear and pure.

The Hamachi Yellowtail Kingfish is called Seriola lalandi in Latin and comes from antibiotic- and hormone-free aquaculture in the Netherlands. Using state-of-the-art RAS technology (Recirculating Aquaculture System), the fish is farmed under strict quality and sustainability standards.
