Hamachi Yellowtail Kingfish – Exquisite Quality for Sashimi Fans


The Hamachi Kingfish is known in Japan as Yellowtail Kingfish or Hiramasa Kingfish and as Amberjack in English-speaking countries. Kingfish has a fresh, slightly mineral flavor. Its flesh is firm, dense, and pink in color. The fillet is delivered with skin on.


In Zeeland, in the southwest of the Netherlands, an exceptional hamachi kingfish is farmed in one of Europe's most modern land-based RAS aquaculture facilities. In the closed-loop system, clean seawater is continuously filtered and reused – without any antibiotics or chemical additives. With natural feed, short transport routes, and the strictest sustainability standards, this farm produces premium kingfish of exceptional quality.

How Hamachi Kingfish Unfolds Its Full Flavor


The Hamachi Yellowtail Kingfish fillet can be enjoyed in a variety of ways – whether raw as sashimi or crudo, thinly sliced and marinated as ceviche, quickly seared, or as confit hamachi. Asian spices work particularly well for a marinade: soy sauce, sesame, and lemongrass perfectly highlight the delicate, slightly mineral taste of this premium fish. When slicing, it’s best to clean the knife blade after each cut so it glides smoothly through the flesh without resistance.


For sashimi enjoyment, we recommend 80 g of Hamachi Kingfish per person. For a main course, a portion of 150 g is appropriate.
