The word "Crudo" comes from Italian and Spanish and means "raw". It is often used to describe dishes that consist of raw material - typically fish, shellfish or meat - and are flavored with a seasoning such as olive oil, citrus juice and/or a vinaigrette. The term "crudo" does not refer to a specific size, shape or technique, so it serves as a catch-all term for anything that is raw and served.
