STEP 1 Place the tuna in the package in cold water for 15-20 minutes until the edges are thawed. Alternatively, remove the tuna immediately from the package and thaw in salt water at approx. 25°C for three minutes.
STEP 2 Remove the tuna from the package and thoroughly remove the saw residue - to do this, rub and dab the tuna with a suitable clean paper towel.
STEP 3 Wrap the tuna neatly in a fresh paper towel. All sides and corners must be covered. When thawing multiple pieces, they must not touch each other. Then let it thaw in the fridge at 3-5°C for at least 3-4 hours.
STEP 4 Remove the tuna from paper towels and let it warm to room temperature so that the beautiful red color can fully develop again. Prepare as desired.


Tunas form their own genus within the fast predatory fish. The tuna owe their name to their enormous speed of up to 75 kilometers per hour - “thýnnos” translates as “I rush”. This is one of the reasons why tunas are able to travel up to 160 kilometers a day. Tunas are among the most important food fish of all - and that brings us to the problem: Some tuna species are threatened by overfishing. This makes it all the more important to only consume tuna that is sustainably caught. What is the best way to prepare tuna?

The suitability for different cooking methods depends on the type of tuna. Red-fleshed tuna, exemplified by our Tuna Saku Block and Tuna Premium Steak, is well-suited for raw consumption due to its sashimi quality. However, caution is advised when frying or grilling this type of tuna: Because red tuna meat is naturally low in fat, exceeding the ideal frying or grilling time can result in dryness.

On the other hand, white tuna meat is less fatty compared to red tuna. This makes white tuna meat, such as our Tuna Premium Steak, much better for frying or grilling. The ideal method for cooking the premium steak is to treat it like a traditional steak, followed by seasoning with coarse sea salt, pepper, and a touch of lemon juice.
