The banana prawn comes from the waters of the Gulf of Carpentaria in Northern Queensland, Australia. It is wild-caught and is both MSC-certified and carbon-neutral – a guarantee of sustainable fishing. The prawns are flash-frozen as a whole immediately after being caught, which optimally preserves their quality. It gets its name from its yellowish color and mild, sweet aroma. With its low-fat and firm texture, it is the perfect base for a variety of dishes. Thanks to its head and shell, an intense aroma develops during cooking, which is transferred to the other ingredients.
