The Obsiblue shrimp live in the lagoons around New Caledonia and are kept and fished there under particularly strict sustainability guidelines. They are shock-frozen immediately after being caught to preserve their exceptional freshness and authentic sashimi-grade taste.

To prepare the carpaccio, carefully remove it from the packaging & remove the protective paper from one side. Arrange on a plate and remove the second sheet of foil. The carpaccio defrosts in 10 minutes at room temperature. Refined with olive oil, salt and pepper, the result is a delicious starter that sets the perfect mood for your meal. For a special twist, you can also serve the carpaccio with caviar and yuzu juice.

Origin

The obsiblue south sea shrimp, with the Latin technical term Litopenaeus stylirostris, is bred in aquacultures in the western Pacific Ocean (FAO 71). These are located in the blue lagoons of New Caledonia, which are part of the UNESCO World Heritage Site and are treated with the utmost care. The animals are bred and fished under the strictest conditions.
