Our North-East Atlantic cod has a tender, white flesh with a fine texture and a mild yet distinctive flavour. The fish has a characteristic aroma that can collect in the vacuum bag. This odour quickly disappears when the fillet is rinsed and then left to rest for a while. This is not a sign of poor quality.
