Made with about 25% yuzu juice—a Japanese citrus fruit that smells like a blend of mandarin, grapefruit, and lime—this yuzu ponzu sauce tastes as fruity and intense as ponzu should. Its bright, juicy acidity combines with an overnight-infused dash, a classic Japanese broth, here made from kombu seaweed, shiitake and enoki mushrooms, and leeks. The dashi gives the sauce a deep, savory flavor that lingers on the palate, all without any additives. A few drops over sashimi, on a pan-seared fillet, or in delicate broths and stews, and every bite tastes more intense, fresher, and more aromatic.

Product description

Yuzu Ponzu by Goto Shoyu: Japanese brewing tradition from Fukuoka

In Japan, ponzu is traditionally served with raw fish and hot pot. The blend of soy sauce and citrus juice tastes salty, sour and savoury all at once. This ponzu sauce is crafted by Goto Shoyu, a fourth-generation soy sauce producer dedicated to making seasonings free from additives. Instead of bonito, Goto Shoyu uses several dashi broths made from ma-kombu, leek, shiitake and enoki, steeped overnight. On the palate, a juicy, aromatic acidity comes first, followed by a mild umami that carries the yuzu rather than masking it.
