Yellowfin Tuna Ventresca - a delicacy among canned fish


Ventresca refers to the belly flap of the tuna – a particularly finely marbled cut with a high intramuscular fat content. In yellowfin tuna (Thunnus albacares), this marbling is precisely what gives it the exceptional juiciness and intense, full-bodied flavour that makes Ventresca so sought after by connoisseurs. Among high-quality canned fish, it is considered an absolute delicacy.


At Ortiz, the Ventresca is processed with the utmost care: the delicate pieces are picked by hand, gently cooked, and then preserved in high-quality olive oil. This protects the delicate structure of the fish and ensures that its flavour and texture can even continue to develop over time.


In the kitchen, not much is needed to highlight this quality: lightly drained on fresh bread, as a filling for delicious onigiri, with a little sea salt and lemon, or as a highlight in simple salads. The buttery texture and intense flavour make Ventresca a product that stands on its own – reduced, pure, and uncompromisingly good.
