vegan tuna spread in tomato - 1/2 wholemeal baguette
- 1/2 cucumber
- 1 ripe avocado
- 1 red or white onion
- Some salt and freshly ground pepper

On warm summer days, there's nothing better than a light, refreshing sandwich. This vegan avocado and tuna sandwich is the perfect choice for a healthy and tasty snack or small meal. With crispy wholemeal bread, creamy avocado, crunchy cucumber and our vegan "Pimp my Sandwich" spread with tomato, this sandwich is guaranteed to be a treat to be repeated.
Preparation
- Wash the cucumber and cut into thin slices.
- Halve the avocado, remove the pit, scoop out the flesh and cut into slices.
- Peel the red onion, cut into thin rings and place in cold water (see tip).
- Cut the wholemeal baguette lengthwise and lightly toast both halves until crispy.
- Distribute the cucumber slices evenly on the bottom half of the baguette.
- Spread the vegan tuna spread "Pimp my Sandwich" in tomato evenly over the cucumbers. Place the avocado slices on top, garnish with chives and season lightly with salt and pepper.
- Place the drained onion rings over the avocado.
- Place the top half of the baguette on top and press the sandwich together lightly.
Tip: To reduce the spiciness of the red onions, cut the onion into thin slices and place it in cold water for about 10 minutes. Then drain well.
