The meat of the grouper is sweet, firm and has a unique, mild flavor, making it suitable for a variety of dishes.

The body of the grouper (family Epinephelidae) is typically perch-like, stocky and strong, with an elongated oval shape and slightly flattened at the sides. Some fish in this family can reach impressive sizes, such as the Goliath grouper (E. itajara) from the tropical Atlantic and the giant grouper (E. lanceolatus) from the Indo-Pacific. Both species can reach a length of more than 3 meters and a weight of over 454 kilograms. The giant grouper is the largest bony fish living in coral reefs.

Groupers live on the coasts of tropical and subtropical seas at depths of up to 300 meters. Most species are found in the area of coral reefs, but also on rocky reefs or over seagrass meadows. The large groupers feed on fish, cephalopods and crustaceans.

Groupers play a key role in the marine ecosystem. Since most of them are at the top of the food pyramid, they contribute to the balance and regulation of the ecosystem by controlling the populations of smaller fish. In heavily fished regions, groupers have declined sharply. More than 50 % of all species are considered threatened.
