Hake is particularly popular in Mediterranean cuisine, as the slightly salty and mild meat can be prepared in a variety of ways. In French cuisine, Breton hake is often served with a simple lemon butter or white wine sauce to complement its natural flavour, while in Spanish cuisine grilled hake with garlic and paprika is a popular preparation. In Brittany itself, hake is sometimes made into a rich fish soup called "soupe de merlu", which is made with fresh seafood and vegetables. Hake also goes perfectly with seasonal German vegetables and boiled potatoes or in Asian fish curries.
