French Toothfish - highly aromatic and buttery soft


The toothfish is also known as black hake or, in North America, as Chilean sea bass, and impresses with its highly aromatic meat and controlled fishing methods. Around the French overseas islands (TAAF), the fish live in the cold Antarctic waters at depths of up to 3,000 meters. There, they are caught using longlines, under the strict supervision of local inspectors on board. Fishing regulations are reviewed and adjusted annually to guarantee healthy fish stocks. Longline fishing also prevents bycatch.

While the fish have a dark brown to black exterior, their flesh is snow-white, buttery-soft, and practically melts in the mouth. French toothfish is also a healthy choice, as it contains not only high levels of omega-3 and omega-6 fatty acids but also many trace elements such as iodine, zinc, and selenium.

Origin

The black hake, scientifically known as Dissostichus eleginoides, is caught using longlines in the southern Indian and Antarctic Oceans (FAO 58). The fish are caught according to MSC standards and under strict quotas around the Crozet and Kerguelen Islands. Local inspectors are stationed on board each vessel to monitor and adjust fishing conditions annually. After being caught, the fish are processed and deep-frozen on board to optimally preserve their fresh quality.
