The tender, snow-white meat of the grouper has a slightly sweet taste and a firm structure, which means it holds its shape perfectly during preparation. We recommend quick preparation at a high temperature, such as grilling or roasting, which makes the outer layer slightly crispy while the inside remains tender and juicy.
