HONEST CATCH fish seasoning - 2 tbsp clarified butter

- 1 organic lemon, cut in half
This recipe highlights the tender and juicy belly pieces of our GOOD GROUPER, which are intensified by the HONEST CATCH fish seasoning. The searing in clarified butter creates a crispy skin, while the fried lemon gives the dish a refreshing note. Ideal for lovers of aromatic fish dishes and perfect as finger food!
Preparation
- Rinse the grouper belly pieces thoroughly and pat dry with a kitchen towel.
- Salt the pieces and then rub evenly with the HONEST CATCH fish seasoning. Make sure that all sides are well seasoned.
- Place the seasoned fish pieces on a plate and chill in the fridge for about 1 hour. This allows the spices to absorb well.
- Heat 1 tablespoon of clarified butter in a pan over medium heat. Fry the lemon halves until lightly browned (about 2-3 minutes). Then remove from the pan and set aside.
- In the same pan, heat the remaining clarified butter (1 tbsp). Place the belly pieces skin side down in the hot pan and sear them. Fry the pieces for about 4-5 minutes until the skin is nice and crispy. Make sure they don't burn. Turn them carefully and fry them for another 2-3 minutes on the other side until the fish is cooked through.
- Arrange the crispy belly pieces on a plate and serve with the fried lemon slices.
Tip: When enjoying the grouper belly pieces, squeeze the fried lemons over them. This intensifies the aroma and gives the fish a refreshing note that goes well with the spicy flavors. Please note that the pieces may contain large bones. The pieces are also good as finger food.
