Marinated white anchovies - hand-processed delicacy


Ortiz's marinated white anchovies are made from fresh, wild-caught anchovies from the Cantabrian Sea, processed during their peak season. After being caught, they are carefully filleted by hand and marinated in white wine vinegar to develop their delicate texture and fine, fresh flavor. Once they reach the ideal maturation, they are preserved in high-quality olive oil with garlic and parsley.

Spanish Boquerones - premium anchovies


The anchovy is a migratory fish that travels great distances during its life. Depending on the region, it is called differently in Spain: "Boquerón" in the south, "Anchoa" or "Bocarte" in the north – but it always refers to the same fish. In addition to their characteristic taste, anchovies are also considered nutrient-rich, due to natural omega-3 fatty acids and valuable vitamins, among other things. They are excellent as a topping for pizza, bread or as an ingredient in a summery pasta puttanesca.

Origin

Ortiz' marinated white anchovies (Boquerones) come from the Cantabrian Sea, one of the highest quality fishing regions for anchovies. They are caught exclusively in the ideal season in spring (April to May), when their size and flavor reach their peak. This ensures the highest quality and simultaneously supports the preservation of fish stocks. Ortiz relies on traditional, selective purse seine fishing, which is gentle on the marine ecosystem and ensures responsible handling of the sea.
