The crystal-clear Adriatic water and the stony soil in front of the southern Italian village of Santo Spirito shape the extraordinary taste of the ingredients in this frittura.

Easy, peasy, Lemon squeezy: Let the frittura thaw at room temperature and then wash it in salt water. Pat dry with a kitchen roll, then flour and fry in a pot with hot oil (e.g. rapeseed oil or sunflower oil). After frying, drain on a plate lined with kitchen roll, season well with salt and serve with a piece of lemon.

Caught with handlines from a Mediterranean fishery (FAO 37). The mixture contains anchovies ( Engraulis encrasiscolus ), Gambero Monocero ( Aristaeomorpha foliacea ), scabbardfish ( Aphanopus carbo ), cuttlefish ( Sepia Officinalis ).
