The “Shimousa” soy sauce has its origins in a region known for its expertise in soy sauce production. In an elaborate process, selected local ingredients are carefully chosen and processed according to time-honored methods, free of additives. The one-year maturation in cedar wood barrels, some of which are over 150 years old, gives the sauce its characteristic reddish-brown color and a complex aroma profile with roasted notes, hints of delicate coniferous wood and orange peel as well as a clear umami taste.
