Ortiz White Tuna – Traditionally caught, gently preserved in glass jars

The White Tuna used (Bonito del Norte, Thunnus alalunga) is considered one of the noblest tuna species available, highly valued for its fine texture and mild flavor. It impressively demonstrates the level of enjoyment and quality that canned fish can achieve. It is caught exclusively during the season from July to October – individually with a fishing rod, a traditional and particularly sustainable fishing method.

After being caught, the fish is processed by Ortiz using genuine handcraftsmanship: the fillets are carefully prepared, placed by hand into glass jars, and then gently cooked in their own juices. This optimally preserves the authentic taste of the fish, ensuring a clear, unadulterated aroma.

In the kitchen, this tuna is extremely versatile: pure with a little lemon juice and olive oil, as a high-quality protein in salads, or as a base for refined dishes. Its juicy, firm texture makes it perfect for flaking into coarse pieces – ideal for modern, light fish cuisine.

Origin

Bonito del Norte comes from the waters of the North Atlantic and is caught there exclusively during its natural season, when it reaches its best quality. The traditional fishing method – fish by fish – not only protects the stocks but also the delicate marine ecosystem.
Ortiz has been processing tuna according to artisanal principles in Spain for over 100 years. Each fish is carefully selected, hand-filleted, and processed with the utmost care. The result is a product that stands for uncompromising quality and genuine taste.
