The waters there are cold and exceptionally nutrient-rich, which makes the animals grow more slowly than in warmer regions. The result: firm, dense meat that stays butter-tender when cooked. They're shock-frozen immediately after the catch, locking in their freshness and quality at their peak. Thanks to their compact size, Patagonian calamari are perfectly suited for the pan, the deep fryer, or the grill. Their delicate flavor pairs beautifully with marinades and spices and takes on a rich depth from a good sear.

For the best result, just 1–2 minutes per side is enough — that keeps the meat tender and juicy.

Origin

Patagonian calamari (Loligo patagonica / Loligo gahi) are caught with trawl nets in the Southwest Atlantic (FAO 41) — in the cold, nutrient-rich waters off the coast of Patagonia. These particular conditions cause the animals to grow slowly, giving them the firm, tender meat that sets them apart from calamari from warmer fishing grounds.
