- 1 can of coconut milk

300 g Bavarian shrimp, easy peel - 1 tablespoon of sugar
- 1 juice of a lime
- 1 lime for garnish
- 2 tbsp fish sauce
- 4 tbsp Thai curry spice
- 2 red chili peppers, deseeded
- 4 kaffir lime leaves

240 ml fish stock - 1 small bunch of coriander
- ½ bunch of Thai basil
- 200 g cherry tomatoes
- 200 g green runner beans
- 150 g mushrooms
Shrimp and Thai Curry is a delicious combination of seafood and exotic spices. The dish is a classic of Asian cuisine and is very popular worldwide.
Preparation
Heat the coconut milk in a pot and slowly bring to the boil.

Add sugar, lime juice, fish sauce, Thai curry seasoning, red chili peppers, kaffir lime leaves and fish stock (or water) and stir until well combined.

Add cherry tomatoes, green runner beans and mushrooms and cook for another 5-7 minutes until vegetables are soft.

Add the Bavarian shrimps and let them cook in the Thai curry for 2 minutes. The Thai curry should no longer cook.

Remove the pot from the heat and garnish with coriander and Thai basil.

Serve the Thai curry with a slice of lime and rice.
