Our Apulian Squid has white, particularly mild meat and a distinct sea flavor. Freshly caught, the squid is processed immediately so that it never gets into contact with freshwater. For this reason, the Calamari meat remains extremely tender and preserves the fresh sea flavor in a unique way.

Product description

The Apulian squid grows in the clear waters of the Adriatic and therefore often adorns the menus of Appulian coastal restaurants. Unlike cuttlefish, which tend to live close to the bottom, the squid is a free swimmer, which makes it so difficult to catch.

Our Squid has always been caught by local fishermen off the coast of Puglia around the charming fishing village of Porto Santo Spirito. It is then processed traditionally.

Calamari piccoli are ideal for Roasting and Deep-Frying or for sauces and stews. Calamari Medio are often stuffed and grilled. After thawing, the squid still needs to be cleaned.

  • The quick version - for those who decide at short notice: If you are in a hurry, it is possible to defrost this product in a water bath within 1 hour. The water should be cold to lukewarm.

Origin

The Apulian calamari, with Latin term Loligo vulgaris , was caught with hand lines in the Mediterranean (FAO 37) .
