The Black Tiger shrimp gets its name from the dark stripes that surround the shell. It grows to an impressive size in the wild and develops a distinct, nutty aroma. When prepared with heat, the flesh of the tiger prawns turns white, while the shell and stripes turn a bright red. It is advisable to fry the shrimp with the shell on when preparing it at high heat, as this protects the tender flesh. The peel also gives its intense flavor to the other ingredients. The shrimp are frozen immediately after being caught so that they retain their sensory freshness.
