Product description

Sustainable aquaculture in Kiel meets top quality

The GOOD GROUPER is one of the most exciting edible fish in modern aquaculture. While grouper has long been prized in high-end restaurants around the world, it is still a real rarity in Germany. Its distinctive flavor, firm texture, and versatility make it an exceptional alternative to traditional whitefish.

The groupers are farmed by our sister company Oceanloop in an innovative, land-based recirculating aquaculture system in Kiel. There, consistent water quality, controlled conditions, and short transport distances lay the foundation for exceptional product quality - all without antibiotics or unnecessary strain on natural stocks. The GOOD GROUPER thus combines the best of modern aquaculture, uncompromising quality, and exceptional flavor.

The landbased GOOD GROUPER impresses with its firm, juicy texture and a unique flavor that is hard to compare to other types of fish. The combination of mild elegance, delicate creaminess, and a subtle sweetness creates an exceptional taste experience with a distinct, recognizable character.

The versatility of GOOD GROUPER loin

Our GOOD GROUPER loins come from the back fillet - the highest-quality part of the fish. This cut is particularly well-suited for precise cooking and a beautiful presentation on the plate. Thanks to its compact shape, the loin remains exceptionally juicy when pan-seared or grilled and develops a delicate crust on the outside. Steamed over vegetables with a light, frothy sauce, the grouper is also a wonderful culinary experience. Thanks to its high quality, the loin can also be served raw - for example, as ceviche or crudo.

Perfect for:

Fine dining at home

Hobby gourmet chefs

Origin

Our GOOD GROUPER (lat. Epinephelus lanceolatus) is farmed by our sister company Oceanloop in a sustainable aquaculture facility in Kiel, Germany. Thanks to innovative recirculating aquaculture technology, Oceanloop is able to raise top-quality giant groupers in a land-based facility. The closed-loop system ensures consistently high water quality and optimal conditions for the fish. Selected feed and species-appropriate stocking densities lay the foundation for healthy growth, a firm, succulent texture, and the distinctive flavor of the GOOD GROUPER. Controlled rearing, short transport routes, and the absence of antibiotics result in an exceptional premium fish - from the aquaculture straight to your plate.
