The swordfish is a large, predatory bony fish that can be found in all tropical and temperate seas worldwide. Its namesake sword-like rostrum can reach a third of the body length in adult fish. Swordfish are one of the finest and most expensive delicacies of the sea; its flesh is firm and very aromatic in taste. As a rule, the flesh of swordfish is white, but there are also dark red to brown areas of the flesh. These areas serve for the predator's long-term marathon swimming. The darker parts of the meat have a stronger flavor than the rest of the swordfish steak and is typical of the species. The steaks are perfect for frying or grilling; the swordfish tastes best when you refine it with olive oil and lemon juice.
