Ora King salmon fillet, with skin - 1 cucumber

nori sheets - 1 medium ripe avocado
- 4 tbsp sesame seeds (white & black mixed)
- 2 tbsp light soy sauce

roasted sesame oil - 1 tbsp chili crisp oil (adjust according to desired spiciness)

salt flakes - Juice of half a lime for the avocado

- For the sushi rice:

rice vinegar - 1 tbsp sugar
- 1 tsp salt
This salmon bowl not only brings color, but also a lot of flavor to the plate. Tender raw salmon meets spicy marinated cucumber, creamy avocado, crunchy edamame and aromatic sushi rice - a real feel-good dish that is fresh, light and filling at the same time. Best of all, the bowl is super easy to prepare and perfect for anyone who likes to eat healthily without spending hours cooking.
Preparation
- Wash the sushi rice thoroughly several times until the water runs clear and cook according to the packet instructions. Then combine 4 tbsp of rice vinegar with 1 tbsp of sugar and 1 tsp of salt and mix carefully with the cooked rice. Set the rice aside.
- Cut 1 cucumber with skin into thin slices or half moons. Mix with 1 tbsp of sesame oil, 2 tbsp of soy sauce and 1 tbsp of chili crisp. Leave to marinate for at least 10 minutes. The longer, the better.
- Cook 300 g of edamame according to the packet instructions, then rinse with cold water. Sprinkle with 1 tsp of salt flakes.
- Carefully remove the skin from the salmon fillet, then cut the salmon into bite-sized cubes. Use a very sharp knife for this.
- Cut 2 nori sheets into small strips with a knife or scissors. Carefully toast 4 tbsp of sesame seeds in a pan without oil until golden brown.
- Halve the avocado, remove the stone and cut into thin slices or cubes. Then drizzle with a little lime juice to prevent it from turning brown.
- Grab some nice bowls for serving. Start with sushi rice as the base, then arrange the salmon, cucumber, edamame and avocado decoratively. Top with the nori strips and toasted sesame seeds. If you like, you can add some more chili crisp oil on top.
Tip: No time for sushi rice? Jasmine rice is the quick, fluffy alternative and still really good!
Optionally, you can marinate the salmon briefly with a little soy sauce and lime juice - but it's also a dream on its own!
