Our vintage sardines were preserved in 2019 and only go on sale a year later. Maturing the sardines in high-quality olive oil with chilli brings the flavors together in a wonderful way. Over time, the spicy olive oil permeates the tender fish flesh, changing and refining the consistency and taste.
