In sushi, the fish is usually the star, but it is the rice that makes the dining experience complete. Tobaya Suten sushi rice vinegar gives the rice a mild tanginess, a gentle sweetness, and a well-rounded seasoning from mirin and soy sauce. This gives it its characteristic shine and an aroma that perfectly complements delicate sashimi fish. The seasoning is already perfectly balanced: pour over the hot rice, fold in, and enjoy.

Product description

Sushi rice vinegar by Tobaya Suten: traditionally Japanese

Tobaya Suten has been brewing rice vinegar in Fukui on Japan's west coast since 1710. To this day, the company remains family-owned. The vinegar makers there view fermentation less as a mere chemical reaction and more as a work of nature, guiding it accordingly. Their philosophy: vinegar should enhance a dish, but never dominate it. This sushi rice vinegar tastes exactly like that. The acidity is pleasantly fresh, the sweetness gently rounds it off, and mirin and soy sauce give it more depth than the usual mixture of vinegar, sugar, and salt.

Reisanbaugebiet in Japan
Reisschale mit Sushi Reis und Lachskaviar

The perfect seasoning for sushi rice and bowls

This sushi vinegar easily transforms ordinary round-grain rice into authentic sushi rice. No tedious measuring and mixing of sugar, salt, and vinegar—the seasoning is already perfectly balanced and goes straight from the bottle onto your rice.
This makes the rice the perfect stage for fish of sashimi-quality. With salmon, tuna, or hamachi, it brings freshness and balance without overpowering the flavors of the fish. Beyond Nigiri and Maki, the sushi vinegar also seasons the rice for Donburi, Poke Bowls, or Chirashi, and is ideal as a sweet and fresh dressing for cucumber salad and raw vegetables. It also works well for quickly marinating vegetables.

Perfect for:

Sushi & Sashimi

Donburi & Nigiri

This sushi rice vinegar comes from Tobaya Suten, a family-run business in Fukui Prefecture on Japan's west coast that has been making rice vinegar since 1710.
