1 kg Obsiblue shrimp - 1 organic lemon

40 ml extra virgin olive oil - 2 tbsp tomato paste

40 ml soy sauce - 1 teaspoon cayenne pepper
- 5 cloves garlic finely chopped
- 1 teaspoon ground pepper
- coriander greens if desired
- Salt
- Pinch of sugar
- Wooden skewers soaked for about 30 minutes

Preparation
- It is best to let the shrimp thaw in the refrigerator overnight.
- Devein the shrimp with a back cut
- For the marinade, mix the olive oil, lemon zest, salt & pepper, cayenne pepper, garlic and finely chopped coriander and marinate with the chopped and cleaned shrimp for about 15 minutes.
- For the glaze, mix the tomato paste with the soy sauce, a pinch of sugar and the lemon juice and set aside.
- Skewer the prawns lengthways onto the watered skewers and grill for 3 minutes each. Then brush with the marinade on the grill using a fireproof brush and grill for another 2 minutes.
- TIP: The recipe also works very well in the pan. To do this, simply prepare the shrimp in the pan and pour the glaze over them after frying and cook for 2 minutes.
