The popular classic from the American Cali Gourmet Kitchen - Cut the lobster meat into bite-sized pieces and cook in melted butter for a few minutes.   • 225g Canadian lobster meat
  • 1 tbsp mayonnaise
  • 2 brioche buns or hot dog buns
  • 2 tbsp chopped celery
  • 1 tbsp chopped chives
  • 40 g butter
  • Juice and zest of half a lemon
  • Some salt and freshly ground pepper

Preparation

  1. Thaw the lobster meat at room temperature for approximately 2-3 hours.
  2. Then cut the lobster meat into bite-sized pieces and cook in the pan in melted butter for a few minutes.
  3. For the dressing, mix the chopped celery, mayonnaise and lemon juice including the zest. Garnish with chives and season with salt and pepper.
  4. Gently mix the lobster meat with the dressing and add it to the brioche buns.

For homemade mayonnaise you need: 220 ml olive oil | 1 egg | 1 tbsp mustard | 1 tbsp lemon juice | 1/2 tsp salt | Put half of the olive oil and the remaining ingredients in a tall container. Place the hand blender in the bottom of the container and mix. To do this, slowly add the rest of the olive oil. After two minutes, slowly raise the mixer until all the oil and the remaining ingredients are homogeneous.
