Seafood mix 250 g - 4 eggs
- 2 tablespoons vegetable oil
- 1 garlic clove, finely chopped
- Salt and pepper
- 2 tbsp Sriracha mayonnaise
- Fresh chives, finely chopped, for garnish
A lightning-fast and delicious omelette with our Seafood Mix, perfect for a quick and delicious seafood treat in under 15 minutes. Succulent seafood and flavoursome garlic are fried until golden brown before being coated in fluffy, whisked eggs. Finished with a layer of spicy Sriracha mayonnaise and a sprinkling of fresh chives, this dish is a perfect treat with minimal effort.
Preparation
- Heat the vegetable oil in a frying pan over a medium heat. Add the seafood and garlic to the pan and fry for about 2 minutes, stirring occasionally, until lightly browned
- Whilst the seafood is frying, beat the eggs in a bowl and season with salt and pepper
- Pour the beaten eggs over the seafood in the pan. Reduce the heat to medium-low and allow the omelette to set slowly. Occasionally lift the sides of the omelette slightly so that the still liquid egg mixture can flow underneath
- As soon as the omelette is almost completely set, carefully turn and fry for a further 2 minutes. Now remove the pan from the heat and carefully slide the omelette onto a plate
- Drizzle the omelette with Sriracha mayonnaise and garnish with fresh chives.
Tip: For the Sriracha mayonnaise, simply mix 2 tablespoons of mayonnaise with 1 tablespoon of Sriracha sauce. Depending on how spicy you want it, you can adjust the amount of Sriracha sauce to your taste.
