Deep in the sub-Antarctic, 4,109 km from the Australian mainland, lies Heard Island, one of the most inhospitable islands in the world. At the southern tip of this remote island, the breathtaking Glacier 51 (Fifty-first Glacier) pours into the surrounding icy waters, creating the ideal environment for the MSC-certified predatory fish that make their rounds in the volcanic underwater crevasses 2,000 meters below sea level.


The sustainable fishing method for Patagonian toothfish should also be emphasized. Longlines are used instead of trawls to minimize bycatch. Once caught, the fish are processed directly on board and shock-frozen to guarantee the highest quality and freshness.

Origin

The black hake, Latin term Dissostichus eleginoides , was caught using hooks and longlines in the Antarctic Indian Ocean (FAO 58).
